Also not a ton of Italians in this part of the country. I grew up in upstate NY in the 60's with many many Italians, many Sicilians and many red sauce restaurants with Chicken Cacciatore. It's chicken done with a yummy sauce that involves browning the chicken, sauteeing peppers, capers, onions some wine and some tomato sauce........mangia! and of course it's traditionally done with the dark meat which is of course the yummy part. Cossetta's does an ok steam table version but it's too salty. I found a Giada Laurentis recipe online that I may try. Just bought some dry vermouth to put in it. Although I did a quick recipe look up and it looks like something I'd enjoy. I would eat anything on Lucia's menu anyway. I was there last Thursday night with a friend and we had the foccacia w/3 spreads - holy delicious! There was a slightly warm artichoke spread and it was so yummy.
