For the Tofu Skeptics – A delicious tofu recipe

If anyone is skeptical about cooking/eating tofu, this recipe will change your mind. It has a fabulous flavor and it’s really QUICK AND EASY to make:
Ingredients
3 T olive oil
1 T minced fresh garlic (go ahead and load on more – I do)
1 T minced fresh ginger
1 T minced fresh turmeric (for those of you in Minneapolis, you won’t find this at Whole Foods, but you can usually find this in your local coop)
8 oz Extra-firm Tofu, cubed into 1-inch pieces
1/4 cup soy sause or tamari (you can also use Bragg’s Liquid Aminos)
Juice of 1/2 lemon
1 T maple syrup
Directions
Saute the Garlic, Ginger, and Turmeric in the Olive Oil, on medium heat, for 1 minute. Add the cubed Tofu, and coat all pieces. Stir carefully so you don’t break all the cubes apart. Pour the Soy or Braggs over the tofu, and continue to stir. Saute for 2-3 minutes. Add the Lemon Juice and the Maple Syrup–the mixture will be quite watery. Saute until the Tofu has absorbed all the liquid–maybe 4-5 minutes. Saute for an additional minute or so if you like a crunchy texture on the outside of the Tofu cubes. Serve immediately.
It’s also good reheated.
Serves 3-4 (easily doubles to make a great side dish for a group)
